PaleOMG is one of my favorite Paleo blogs and I have a loooong list of recipes from her site that I want to try. This one made it to the top of the least for two reasons: 1) Who doesn’t love cheesecake? 2) How they heck is this going to taste like caramel cheesecake and still be Paleo?
This was probably the most labor intensive recipe I have encountered to date! I also learned from this experience that my days of getting by with a small (free…thanks mom) food processor are over. Once finished, it was definitely worth it! The crust was amazing, the filling was reminiscent of cheesecake- buttery and rich. The “caramel” topping was decadent…though much too sweet for me. I have never been a fan of dates, but I gave them a chance here. My mom thought this was the best thing ever, so I ended up giving the entire batch to her! I was happy scraping off most of the caramel layer and devouring the rest of my piece though. This would be excellent with a creamy lemon or just a plain whipped topping…will have to experiment with Paleo-friendly versions of those soon.
